The Story Behind It

The Tale of Fërgesë

Story updated

Fërgesë is a rustic Albanian dish of peppers, tomatoes, and soft cheese (often paired with organ meats or beef) simmered together in a skillet. Like much Albanian home cooking, it has no single documented inventor; it reflects a broader Balkan tradition of stewing garden peppers and dairy that runs through Albania, Macedonia, and neighboring countries.

Ingredients

Scale:· 4 servings
  • 4 red bell peppers, sliced
  • 3 tbsp olive oil
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 cup crumbled feta or Albanian gjizë cheese
  • 2 eggs
  • Salt and black pepper
  • Crusty bread, for serving

Instructions

  1. 1Sauté the bell peppers in olive oil over medium heat until softened and lightly charred, about 15 minutes.
  2. 2Add the tomatoes and garlic and cook until the tomatoes break down, about 10 minutes.
  3. 3Stir in the crumbled cheese and cook until it begins to melt into the vegetables.
  4. 4Crack the eggs into the pan and stir gently until just set.
  5. 5Season with salt and pepper.
  6. 6Serve hot with crusty bread for dipping.
