Ashak (Leek Dumplings)

Ingredients

  • 3 cups chopped leeks and scallion greens
  • 30 round dumpling wrappers
  • 1 lb ground beef
  • 1 onion, finely diced
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 tbsp dried mint
  • 1 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. 1Wash and finely chop the leeks and scallion greens, then mix with a little salt to draw out moisture.
  2. 2Place a spoonful of the leek mixture on each wrapper and fold into a half-moon, sealing the edges well.
  3. 3Brown the ground beef with diced onion, coriander, salt, and pepper to make a meat sauce.
  4. 4Simmer the tomato sauce briefly with a pinch of the browned meat mixture for flavor.
  5. 5Boil the ashak dumplings in salted water for 8 to 10 minutes until they float, then drain gently.
  6. 6Whisk the yogurt with minced garlic and a pinch of salt.
  7. 7Spread garlic yogurt on a serving platter, arrange the boiled ashak on top, then spoon over the meat sauce and tomato sauce.
  8. 8Garnish with dried mint and serve warm.
