Sesame Vegetable Stir-Fry

Ingredients

  • 2 tbsp vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 tbsp toasted sesame seeds
  • Cooked rice, for serving

Instructions

  1. 1Heat the vegetable oil in a large wok or skillet over high heat until shimmering.
  2. 2Add the broccoli, bell pepper, snap peas, and carrot, and stir-fry for 4 to 5 minutes until crisp-tender and lightly charred in spots.
  3. 3Add the garlic and ginger and cook for 30 seconds until fragrant.
  4. 4Whisk together the soy sauce, rice vinegar, honey, and sesame oil, then pour over the vegetables.
  5. 5Toss to coat and cook for 1 to 2 minutes, until the sauce thickens slightly and coats the vegetables.
  6. 6Sprinkle with sesame seeds and serve hot over rice.
