Mushroom and Walnut Veggie Burgers

Ingredients

  • 1 tbsp olive oil
  • 8 oz mushrooms, finely chopped
  • 1/2 onion, finely diced
  • 2 cloves garlic, minced
  • 3/4 cup walnuts, finely chopped
  • 1 cup cooked brown rice
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tbsp soy sauce
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp vegetable oil, for cooking
  • 4 burger buns and toppings, for serving

Instructions

  1. 1Heat the olive oil in a skillet over medium heat and cook the mushrooms and onion for 6 to 8 minutes, stirring occasionally, until the mushrooms release their liquid and it evaporates; add the garlic and cook for 30 seconds more.
  2. 2Transfer the mushroom mixture to a large bowl and let cool slightly.
  3. 3Stir in the walnuts, rice, breadcrumbs, egg, soy sauce, and smoked paprika, and season with salt and pepper.
  4. 4Mix well and shape into 4 patties, pressing firmly so they hold together.
  5. 5Heat the vegetable oil in a skillet over medium heat and cook the patties for 4 to 5 minutes per side, until golden brown and firm to the touch.
  6. 6Serve on toasted buns with your favorite toppings.
