Baked Cauliflower "Wings"

Ingredients
- 1 medium head cauliflower, cut into bite-sized florets
- 3/4 cup all-purpose flour
- 3/4 cup milk
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 3/4 cup panko breadcrumbs
- 1/2 cup hot sauce
- 2 tbsp melted butter
- Ranch or blue cheese dressing, for serving
Instructions
- 1Preheat the oven to 450 F and line a baking sheet with parchment paper.
- 2Whisk together the flour, milk, garlic powder, smoked paprika, salt, and pepper in a bowl to make a smooth batter.
- 3Dip each cauliflower floret into the batter, letting the excess drip off, then roll in the panko breadcrumbs to coat.
- 4Arrange the coated florets on the prepared baking sheet in a single layer and bake for 20 to 25 minutes, flipping halfway through, until golden and crisp.
- 5Meanwhile, stir together the hot sauce and melted butter in a large bowl.
- 6Toss the baked florets in the hot sauce mixture until evenly coated.
- 7Return to the oven for 5 more minutes to set the sauce, then serve immediately with ranch or blue cheese dressing.
