Caprese Tomato and Mozzarella Skillet

Ingredients
- 2 tbsp olive oil, divided
- 4 cloves garlic, sliced
- 4 cups cherry or grape tomatoes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 8 oz fresh mozzarella pearls or cubed mozzarella
- 1/4 cup fresh basil leaves, torn
- 1 tbsp balsamic glaze, for drizzling
- Crusty bread, for serving
Instructions
- 1Heat 1 tablespoon of the olive oil in a large skillet over medium heat and cook the garlic for about 1 minute until fragrant but not browned.
- 2Add the tomatoes, salt, pepper, and oregano, and cook for 8 to 10 minutes, stirring occasionally, until the tomatoes soften and begin to burst and release their juices.
- 3Reduce the heat to low and nestle the mozzarella pieces into the tomatoes.
- 4Cover and cook for 2 to 3 minutes, just until the cheese begins to soften and turn glossy; take care not to let it fully melt into the sauce.
- 5Remove from the heat, drizzle with the remaining olive oil and the balsamic glaze, and scatter the fresh basil on top.
- 6Serve straight from the skillet with crusty bread for dipping.
