Classic Black Bean Burgers

Ingredients
- 2 cans (15 oz each) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely diced onion
- 2 cloves garlic, minced
- 1 egg
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and black pepper, to taste
- 2 tbsp vegetable oil, for cooking
- 4 burger buns
- Lettuce, tomato, and condiments, for serving
Instructions
- 1Add the black beans to a large bowl and mash with a fork or potato masher, leaving some beans whole for texture.
- 2Stir in the breadcrumbs, onion, garlic, egg, cumin, and chili powder, and season with salt and pepper.
- 3Mix until well combined, then shape into 4 patties; if the mixture feels too wet, add a bit more breadcrumbs.
- 4Heat the oil in a skillet over medium heat and cook the patties for 4 to 5 minutes per side, until a deep golden crust forms and the patties hold together firmly.
- 5Toast the buns lightly, if desired, then assemble the burgers with lettuce, tomato, and your favorite condiments.
