Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup vegetable broth
  • Salt and pepper, to taste

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and cook the onion, bell pepper, and zucchini for 6 to 8 minutes until softened.
  2. 2Stir in the garlic, chili powder, and cumin and cook for 1 minute until fragrant.
  3. 3Add the crushed tomatoes, black beans, kidney beans, corn, and vegetable broth, and bring to a boil.
  4. 4Reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally, until thickened.
  5. 5Season with salt and pepper to taste and serve hot, with toppings such as avocado or shredded cheese if desired.
