Lentil Soup

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 1/2 cups dried brown or green lentils, rinsed
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 2 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- 1Heat the olive oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
- 2Stir in the garlic, cumin, and smoked paprika and cook for 1 minute until fragrant.
- 3Add the lentils, diced tomatoes, and vegetable broth, and bring the pot to a boil.
- 4Reduce the heat and simmer, partially covered, for 25 to 30 minutes, until the lentils are tender.
- 5Stir in the lemon juice, then season with salt and pepper to taste.
- 6For a thicker soup, puree a portion with an immersion blender before serving.
