Lentil Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 1/2 cups dried brown or green lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
  2. 2Stir in the garlic, cumin, and smoked paprika and cook for 1 minute until fragrant.
  3. 3Add the lentils, diced tomatoes, and vegetable broth, and bring the pot to a boil.
  4. 4Reduce the heat and simmer, partially covered, for 25 to 30 minutes, until the lentils are tender.
  5. 5Stir in the lemon juice, then season with salt and pepper to taste.
  6. 6For a thicker soup, puree a portion with an immersion blender before serving.
