Irish Lamb Stew

Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 potatoes, cut into chunks
- 3 carrots, cut into chunks
- 4 cups beef or lamb broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- 1Pat the lamb dry and season with salt and pepper, then heat the oil in a large pot over medium-high heat and brown the lamb in batches, about 3 minutes per side, and set aside.
- 2Add the onion to the pot and cook for 5 minutes until softened, then stir in the garlic and cook for 30 seconds.
- 3Stir in the tomato paste and cook for 1 minute, then return the lamb to the pot along with the broth, thyme, and bay leaves.
- 4Bring to a simmer, cover, and cook on low heat for 45 minutes, until the lamb starts to become tender.
- 5Add the potatoes and carrots and continue simmering, covered, for 30 to 40 minutes, until the lamb and vegetables are fully tender.
- 6Remove the bay leaves, season with salt and pepper to taste, and finish with chopped parsley before serving.
