Ham and Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 2 cups diced ham
  • 6 cups chicken broth
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and cook the onion, carrots, and celery for 6 to 8 minutes until softened.
  2. 2Stir in the garlic and cook for 30 seconds until fragrant.
  3. 3Add the beans, ham, chicken broth, bay leaf, and thyme, and bring the pot to a boil.
  4. 4Reduce the heat and simmer, partially covered, for 45 to 60 minutes, stirring occasionally.
  5. 5For a thicker soup, mash a portion of the beans against the side of the pot with a spoon and stir them back in.
  6. 6Remove the bay leaf, season with salt and pepper to taste, and serve hot.
