Creamy Tomato Soup

Ingredients
- 2 tbsp butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 oz each) whole peeled tomatoes
- 2 cups vegetable broth
- 1 tsp sugar
- 1/2 cup heavy cream
- 1 tsp dried basil
- Salt and pepper, to taste
Instructions
- 1Melt the butter in a large pot over medium heat and cook the onion for 5 minutes until soft and translucent.
- 2Add the garlic and cook for 30 seconds until fragrant.
- 3Pour in the tomatoes with their juices, breaking them up with a spoon, then add the vegetable broth, sugar, and basil.
- 4Bring to a simmer and cook for 15 minutes to let the flavors develop.
- 5Puree the soup with an immersion blender until smooth, or carefully blend in batches in a countertop blender.
- 6Stir in the heavy cream and warm gently over low heat without boiling.
- 7Season with salt and pepper to taste before serving.
