Creamy Tomato Soup

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 oz each) whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 tsp sugar
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • Salt and pepper, to taste

Instructions

  1. 1Melt the butter in a large pot over medium heat and cook the onion for 5 minutes until soft and translucent.
  2. 2Add the garlic and cook for 30 seconds until fragrant.
  3. 3Pour in the tomatoes with their juices, breaking them up with a spoon, then add the vegetable broth, sugar, and basil.
  4. 4Bring to a simmer and cook for 15 minutes to let the flavors develop.
  5. 5Puree the soup with an immersion blender until smooth, or carefully blend in batches in a countertop blender.
  6. 6Stir in the heavy cream and warm gently over low heat without boiling.
  7. 7Season with salt and pepper to taste before serving.
