The Story Behind It

The Tale of Shredded Chicken Tacos

Story updated

Tacos trace back to Mexico, where the word likely referred to the paper wrapping miners used for gunpowder charges before it came to mean a filled tortilla. Shredded chicken fillings became common as tacos spread into American home cooking, and the slow cooker offered an easy way to replicate long-simmered, fall-apart meat.

Ingredients

Scale:· 6 servings
  • 2 lb boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1/2 cup chicken broth
  • 1 tbsp lime juice
  • 12 small taco tortillas
  • Shredded lettuce, cheese, and diced tomato for topping

Instructions

  1. 1Place the chicken breasts in the bottom of the slow cooker.
  2. 2Sprinkle the taco seasoning over the chicken, then pour the salsa, chicken broth, and lime juice on top.
  3. 3Cover and cook on low for 5 to 6 hours or on high for 3 hours, until the chicken shreds easily with a fork.
  4. 4Remove the chicken, shred it with two forks, and return it to the slow cooker to soak up the remaining sauce for a few minutes.
  5. 5Spoon the shredded chicken into warmed tortillas and top with lettuce, cheese, and tomato.
