Lentil Soup

Ingredients
- 1.5 cups dried brown or green lentils, rinsed
- 1 onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 bay leaf
- 2 cups chopped spinach
- Salt and black pepper to taste
Instructions
- 1Add the lentils, onion, carrots, celery, garlic, diced tomatoes, broth, cumin, smoked paprika, and bay leaf to the slow cooker and stir to combine.
- 2Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the lentils and vegetables are tender.
- 3Remove the bay leaf and stir in the chopped spinach, letting it wilt in the residual heat for a few minutes.
- 4Season with salt and pepper to taste before serving.
