Ingredients

  • 1.5 cups dried brown or green lentils, rinsed
  • 1 onion, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 2 cups chopped spinach
  • Salt and black pepper to taste

Instructions

  1. 1Add the lentils, onion, carrots, celery, garlic, diced tomatoes, broth, cumin, smoked paprika, and bay leaf to the slow cooker and stir to combine.
  2. 2Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the lentils and vegetables are tender.
  3. 3Remove the bay leaf and stir in the chopped spinach, letting it wilt in the residual heat for a few minutes.
  4. 4Season with salt and pepper to taste before serving.
