Ingredients
- 2 lb beef stew meat, cut into cubes
- 3 tbsp all-purpose flour
- Salt and black pepper to taste
- 2 tbsp vegetable oil
- 4 carrots, sliced
- 3 potatoes, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 cup frozen peas
Instructions
- 1Toss the beef cubes with the flour, salt, and pepper until lightly coated.
- 2Heat the oil in a skillet over medium-high heat and brown the beef in batches, about 2 minutes per side, then transfer it to the slow cooker (browning is optional but improves flavor).
- 3Add the carrots, potatoes, onion, and garlic to the slow cooker with the beef.
- 4Stir together the broth, tomato paste, and thyme, then pour it over the beef and vegetables.
- 5Cover and cook on low for 7 to 8 hours or on high for 4 hours, until the beef and vegetables are tender.
- 6Stir in the frozen peas during the last 15 minutes of cooking and season with additional salt and pepper before serving.
