Spanish Rice

Ingredients

  • 2 tbsp vegetable oil
  • 1 1/2 cups long-grain white rice
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 2 tbsp chopped cilantro, for garnish

Instructions

  1. 1Heat the oil in a saucepan over medium heat and toast the rice, stirring frequently, until lightly golden, about 4-5 minutes.
  2. 2Add the onion and garlic and cook for 2-3 minutes, until fragrant.
  3. 3Stir in the tomato sauce, broth, cumin, chili powder, and salt, and bring to a boil.
  4. 4Cover, reduce heat to low, and simmer for 18-20 minutes, until the rice is tender and the liquid is absorbed.
  5. 5Fluff with a fork, garnish with cilantro, and serve.
