Green Bean Casserole

Ingredients

  • 2 lbs fresh green beans, trimmed and halved
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups crispy fried onions, divided

Instructions

  1. 1Preheat the oven to 375 F and blanch the green beans in boiling salted water for 4-5 minutes, then drain and set aside.
  2. 2Melt the butter in a large skillet and saute the mushrooms and garlic until softened, about 5 minutes.
  3. 3Sprinkle the flour over the mushrooms and cook for 1 minute, then whisk in the broth and cream.
  4. 4Simmer for 3-4 minutes, until thickened, and season with salt and pepper.
  5. 5Fold in the green beans and half of the crispy onions, then transfer to a baking dish.
  6. 6Bake for 20 minutes, top with the remaining onions, and bake 5 more minutes until golden and bubbly.
