The Story Behind It

The Tale of Fluffy Dinner Rolls

Story updated

Yeast-leavened bread rolls have been baked across Europe for centuries. Soft, buttery dinner rolls became a defining feature of American home baking and holiday tables by the 19th and 20th centuries as commercial yeast and refined flour grew more accessible.

Ingredients

Scale:· 12 servings
  • 1 cup warm whole milk (110 F)
  • 2 1/4 tsp active dry yeast
  • 1/4 cup sugar
  • 1 large egg
  • 4 tbsp melted butter, plus more for brushing
  • 3 1/2 cups all-purpose flour
  • 1 tsp salt

Instructions

  1. 1Combine the warm milk, yeast, and sugar in a bowl and let sit for 5-10 minutes, until foamy.
  2. 2Whisk in the egg and melted butter, then stir in the flour and salt to form a shaggy dough.
  3. 3Knead on a floured surface for 6-8 minutes, until smooth and elastic, then place in a greased bowl, cover, and let rise for 1 hour, until doubled.
  4. 4Punch down the dough, divide into 12 pieces, and shape each into a ball; arrange in a greased baking dish.
  5. 5Cover and let rise for another 30 minutes, then preheat the oven to 375 F.
  6. 6Bake for 18-20 minutes, until golden brown on top, and brush with melted butter as soon as they come out of the oven.
