The Tale of Crispy Roasted Potatoes

Story updated

Roasting potatoes with fat until crisp is a technique long used across European cooking, notably in British Sunday roasts, where roast potatoes cooked in drippings became a traditional accompaniment by the 19th century.

Ingredients

Scale:· 4 servings
  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1Preheat the oven to 425 F and line a baking sheet with parchment paper.
  2. 2Toss the halved potatoes with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated.
  3. 3Spread the potatoes cut-side down in a single layer so they can crisp properly.
  4. 4Roast for 30-35 minutes, flipping once halfway through, until deeply golden and crisp on the outside and tender inside.
  5. 5Serve immediately while hot and crackly.
