Sheet-Pan Steak and Veggies

Ingredients

  • 1.5 lbs sirloin steak, cut into cubes
  • 1 lb baby potatoes, quartered
  • 1 red bell pepper, chunked
  • 1 cup broccoli florets
  • 3 tbsp olive oil, divided
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  1. 1Preheat the oven to 425°F and line a sheet pan with foil.
  2. 2Toss the potatoes with a tablespoon of oil and a pinch of salt, spread on the pan, and roast for 12 minutes to soften them before the steak goes on.
  3. 3Meanwhile, toss the steak cubes and remaining vegetables with the rest of the oil, soy sauce, garlic, onion powder, salt, and pepper.
  4. 4Add the steak and vegetables to the same pan with the potatoes, spreading everything into one even layer so it browns instead of steams.
  5. 5Roast for 8 to 10 minutes for medium doneness, tossing once, until the steak is browned outside and the vegetables are tender-crisp.
  6. 6Let the pan rest for a couple of minutes, sprinkle with parsley, and serve.
