Sheet-Pan Meatballs and Vegetables

Ingredients
- 1 lb ground beef or Italian sausage
- 1/3 cup breadcrumbs
- 1 egg
- 2 tbsp grated Parmesan
- 2 cloves garlic, minced
- 1/2 tsp Italian seasoning
- 1/2 tsp salt, divided
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 red onion, chunked
- 2 tbsp olive oil
Instructions
- 1Preheat the oven to 400°F and line a large sheet pan with parchment paper.
- 2In a bowl, mix the ground beef, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, and half the salt, then roll into 16 to 18 evenly sized meatballs.
- 3Arrange the meatballs on one side of the sheet pan, leaving space between them so they brown rather than steam.
- 4Toss the zucchini, cherry tomatoes, and red onion with olive oil and remaining salt, then spread on the other side of the same pan.
- 5Bake for 20 to 25 minutes, turning the meatballs once, until they reach 160°F internally and the vegetables are tender and lightly charred.
- 6Serve everything together straight from the sheet pan.
