Sheet-Pan BBQ Chicken and Corn

Ingredients
- 4 bone-in chicken drumsticks or thighs
- 2 ears corn, cut into thirds
- 1 lb baby potatoes, halved
- 2/3 cup barbecue sauce, divided
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- 1Preheat the oven to 400°F and line a large sheet pan with foil.
- 2Toss the potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper, then spread on the sheet pan and roast for 10 minutes to get a head start.
- 3Rub the chicken with a little olive oil and seasoning, then add it to the pan along with the corn, arranging everything in a single layer.
- 4Brush the chicken generously with half the barbecue sauce.
- 5Roast for 20 to 25 minutes, brushing with the remaining barbecue sauce halfway through, until the chicken reaches 165°F and the potatoes are tender.
- 6Serve everything straight from the sheet pan with extra barbecue sauce on the side.
