The Story Behind It

The Tale of Shrimp Scampi

Story updated

Scampi originally referred to a small Mediterranean lobster, langoustine, prepared in garlic and butter in Italy. Italian-American immigrants adapted the technique to shrimp, since true scampi were unavailable in the US, creating the garlic-butter shrimp dish now known by that name.

Ingredients

Scale:· 4 servings
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 2 tbsp chopped fresh parsley

Instructions

  1. 1Pat the shrimp dry and season lightly with salt.
  2. 2Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat.
  3. 3Add the shrimp in a single layer and cook for 1 to 2 minutes per side, until pink and just opaque, then transfer to a plate.
  4. 4Add the garlic and red pepper flakes to the pan and cook for 30 seconds until fragrant.
  5. 5Pour in the white wine and lemon juice, scraping up any browned bits, and simmer for 2 minutes to reduce slightly.
  6. 6Stir in the remaining butter until melted, return the shrimp to the pan, and toss to coat.
  7. 7Sprinkle with parsley and serve immediately.
