Shrimp Fried Rice

Ingredients
- 1 lb medium shrimp, peeled and deveined
- 3 cups cooked, cold day-old rice
- 2 tbsp vegetable oil, divided
- 2 large eggs, beaten
- 1/2 cup frozen peas and carrots
- 3 green onions, sliced
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp black pepper
Instructions
- 1Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat and cook the shrimp for 2 to 3 minutes until pink, then remove and set aside.
- 2Push the shrimp aside, pour the beaten eggs into the pan, and scramble until just set, then remove and set aside with the shrimp.
- 3Add the remaining oil to the pan and stir-fry the peas, carrots, and garlic for 2 minutes.
- 4Add the cold rice, breaking up any clumps, and stir-fry for 3 to 4 minutes until heated through and starting to crisp slightly.
- 5Return the shrimp and eggs to the pan, add the soy sauce, sesame oil, and pepper, and toss everything together.
- 6Stir in the green onions and serve hot.
