Shrimp Fried Rice

Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 3 cups cooked, cold day-old rice
  • 2 tbsp vegetable oil, divided
  • 2 large eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper

Instructions

  1. 1Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat and cook the shrimp for 2 to 3 minutes until pink, then remove and set aside.
  2. 2Push the shrimp aside, pour the beaten eggs into the pan, and scramble until just set, then remove and set aside with the shrimp.
  3. 3Add the remaining oil to the pan and stir-fry the peas, carrots, and garlic for 2 minutes.
  4. 4Add the cold rice, breaking up any clumps, and stir-fry for 3 to 4 minutes until heated through and starting to crisp slightly.
  5. 5Return the shrimp and eggs to the pan, add the soy sauce, sesame oil, and pepper, and toss everything together.
  6. 6Stir in the green onions and serve hot.
