Poached Salmon with Lemon Dill Sauce

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 cups water
  • 1/2 cup dry white wine (optional)
  • 1 lemon, sliced
  • 2 sprigs fresh dill, plus 1 tbsp chopped for sauce
  • 1/2 cup sour cream
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper

Instructions

  1. 1In a wide skillet, combine the water, white wine, lemon slices, dill sprigs, and half the salt, and bring to a gentle simmer.
  2. 2Slide the salmon fillets into the liquid, cover, and reduce the heat to low.
  3. 3Poach for 10 to 12 minutes, until the salmon is opaque and flakes easily with a fork.
  4. 4Meanwhile, whisk together the sour cream, chopped dill, lemon juice, remaining salt, and pepper to make the sauce.
  5. 5Carefully lift the salmon out of the poaching liquid with a slotted spatula and let drain briefly.
  6. 6Serve the salmon warm topped with a spoonful of the lemon dill sauce.
