Poached Salmon with Lemon Dill Sauce

Ingredients
- 4 salmon fillets (6 oz each)
- 2 cups water
- 1/2 cup dry white wine (optional)
- 1 lemon, sliced
- 2 sprigs fresh dill, plus 1 tbsp chopped for sauce
- 1/2 cup sour cream
- 1 tbsp fresh lemon juice
- 1/2 tsp salt, divided
- 1/4 tsp black pepper
Instructions
- 1In a wide skillet, combine the water, white wine, lemon slices, dill sprigs, and half the salt, and bring to a gentle simmer.
- 2Slide the salmon fillets into the liquid, cover, and reduce the heat to low.
- 3Poach for 10 to 12 minutes, until the salmon is opaque and flakes easily with a fork.
- 4Meanwhile, whisk together the sour cream, chopped dill, lemon juice, remaining salt, and pepper to make the sauce.
- 5Carefully lift the salmon out of the poaching liquid with a slotted spatula and let drain briefly.
- 6Serve the salmon warm topped with a spoonful of the lemon dill sauce.
