The Story Behind It

The Tale of Grilled Shrimp Skewers

Story updated

Skewering and grilling meat and seafood is one of the oldest cooking methods across many cultures, from Mediterranean souvlaki to Southeast Asian satay. Shrimp skewers reflect this broadly shared technique, adapted for quick, high-heat cooking.

Ingredients

Scale:· 4 servings
  • 1 1/2 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, cut into wedges
  • wooden or metal skewers

Instructions

  1. 1If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  2. 2In a bowl, whisk together the olive oil, garlic, lemon juice, smoked paprika, salt, and pepper, then toss with the shrimp to coat.
  3. 3Thread the shrimp onto the skewers, leaving a little space between each piece.
  4. 4Preheat a grill or grill pan to medium-high heat.
  5. 5Grill the skewers for 2 to 3 minutes per side, until the shrimp are pink and opaque throughout.
  6. 6Serve hot with lemon wedges.
