Garlic Shrimp Linguine

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz linguine
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup reserved pasta water
  • 2 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp salt

Instructions

  1. 1Bring a large pot of salted water to a boil and cook the linguine according to the package directions, reserving 1/2 cup of pasta water before draining.
  2. 2While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. 3Season the shrimp with salt, add to the skillet, and cook for 1 to 2 minutes per side until pink, then transfer to a plate.
  4. 4Add the garlic and red pepper flakes to the pan and cook for 30 seconds, then stir in the remaining butter, lemon juice, and a splash of the reserved pasta water.
  5. 5Add the drained linguine and shrimp to the pan and toss to coat, adding more pasta water as needed to loosen the sauce.
  6. 6Stir in the Parmesan and parsley and serve immediately.
