The Tale of Foil Packet Salmon with Vegetables
Story updated
Cooking fish and vegetables together in a sealed foil packet echoes the French technique en papillote, developed to steam-cook delicate ingredients in their own juices. Foil largely replaced parchment for home cooks in the mid-20th century as it became a widely available kitchen staple.
Ingredients
Scale:· 4 servings
- 4 salmon fillets (6 oz each)
- 2 cups baby potatoes, thinly sliced
- 1 cup green beans, trimmed
- 1 zucchini, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 lemon, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- 1Preheat the oven to 400°F and cut four large sheets of foil.
- 2Toss the potatoes with 1 tablespoon of olive oil and a pinch of salt, then microwave or parboil for 4 minutes to soften slightly.
- 3Divide the potatoes, green beans, and zucchini among the foil sheets and top each pile with a salmon fillet.
- 4Drizzle everything with the remaining olive oil, sprinkle with garlic, Italian seasoning, salt, and pepper, and top with lemon slices.
- 5Fold and seal each foil packet tightly and place on a baking sheet.
- 6Bake for 18 to 20 minutes, until the salmon flakes easily and the vegetables are tender, then carefully open the packets to let steam escape before serving.
