The Story Behind It

The Tale of Foil Packet Fish with Herbs and Vegetables

Story updated

Foil-packet cooking mirrors the classical French en papillote method of steaming food in a sealed parcel, adapted with modern aluminum foil, a technique that became a popular convenient, low-mess approach in mid-20th-century American home cooking.

Ingredients

Scale:· 4 servings
  • 4 white fish fillets (cod or halibut, 6 oz each)
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced

Instructions

  1. 1Preheat the oven to 400°F and cut four large squares of foil.
  2. 2Place a fish fillet in the center of each foil square and surround it with cherry tomatoes, zucchini, and red onion.
  3. 3Drizzle everything with olive oil, then sprinkle with garlic, Italian herbs, salt, and pepper, and top with a lemon slice.
  4. 4Fold the foil up and over the fish and vegetables, sealing the edges tightly to form a packet.
  5. 5Place the packets on a baking sheet and bake for 15 to 18 minutes, until the fish flakes easily with a fork.
  6. 6Carefully open the packets, letting the steam escape away from your face, before serving.
