Ahi Tuna Poke Bowl

Ingredients
- 1 lb sushi-grade ahi tuna, cut into 1/2-inch cubes
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1 tsp grated fresh ginger
- 2 green onions, thinly sliced
- 1 tsp sesame seeds
- 4 cups cooked sushi rice
- 1 avocado, sliced
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 tbsp furikake or extra sesame seeds, for garnish
Instructions
- 1In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, and ginger.
- 2Add the tuna cubes to the marinade along with the green onions and sesame seeds, and gently toss to coat.
- 3Cover and refrigerate for 15 to 20 minutes, stirring once, to let the flavors meld.
- 4Divide the sushi rice among four bowls.
- 5Top each bowl with the marinated tuna, avocado slices, shredded carrots, and cucumber.
- 6Sprinkle with furikake or extra sesame seeds and serve immediately while the fish is cold and fresh.
