The Tale of Teriyaki Sauce
Story updated
Teriyaki describes a centuries-old Japanese cooking technique in which meat or fish is glazed with a sweet soy-based sauce and grilled until glossy, 'teri' meaning shine and 'yaki' meaning grilled. The sauce as commonly sold and used in the US today is often a sweeter, Americanized adaptation, popularized partly through Hawaii.
