Red Wine Pan Sauce

Ingredients

  • Pan drippings from seared steak
  • 2 tbsp minced shallot
  • 3/4 cup dry red wine
  • 3/4 cup beef stock
  • 2 tbsp cold butter, cubed
  • Salt and pepper, to taste

Instructions

  1. 1Sauté shallot in the same pan used to sear meat until softened, about 1 minute.
  2. 2Pour in red wine, scraping up browned bits, and simmer until reduced by half.
  3. 3Add beef stock and simmer until reduced by half again.
  4. 4Off heat, whisk in cold butter piece by piece until glossy.
  5. 5Season with salt and pepper.
