The Tale of Pizza Sauce
Story updated
Pizza sauce descends from Neapolitan tomato-topped flatbreads that emerged after tomatoes arrived in Italy from the Americas in the 16th century, becoming widespread in Naples by the 18th and 19th centuries. Simple, lightly cooked tomato sauce remains the traditional Neapolitan approach, while American pizzerias developed thicker, more seasoned versions.
