The Tale of Enchilada Sauce
Story updated
Enchilada sauce grew from Mexican chile-based sauces used to "enchilar," or season with chile, corn tortillas, a practice recorded since colonial-era Mexico. Red and green versions reflect regional chile preferences, and the sauce became a Tex-Mex staple as it crossed into the American Southwest.
