The Tale of Alfredo Sauce
Story updated
Fettuccine Alfredo was created around 1908-1914 by Roman restaurateur Alfredo di Lelio, who tossed pasta with butter and Parmesan to please his pregnant wife's appetite. The rich, cream-heavy version familiar in the US is largely an American adaptation, far removed from the simple Roman original.
