The Tale of Veggie Hummus Wrap
Story updated
Hummus has ancient roots in the Middle East, made from chickpeas and tahini for centuries across the region. Wrapping it with vegetables in a tortilla is a modern, largely Western format, part of the wrap sandwich trend that took off in the US during the 1990s.
Ingredients
Scale:· 2 servings
- 2 large flour tortillas
- 1/2 cup hummus
- 1 cup shredded lettuce or spinach
- 1/2 cucumber, thinly sliced
- 1 carrot, shredded
- 1/2 red bell pepper, thinly sliced
- 1/4 cup crumbled feta cheese, optional
- Salt and pepper, to taste
Instructions
- 1Lay the tortillas flat and spread an even layer of hummus over each one, leaving a small border around the edges.
- 2Layer the lettuce, cucumber, carrot, and bell pepper down the center of each tortilla.
- 3Sprinkle with feta cheese if using and season lightly with salt and pepper.
- 4Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose the filling.
- 5Slice each wrap in half on a diagonal and serve right away, or wrap tightly in plastic for later.
