Philly Cheesesteak Sandwich

Ingredients
- 3/4 lb thinly sliced ribeye or sirloin steak
- 2 hoagie rolls
- 1 tbsp vegetable oil
- 1 small onion, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 4 slices provolone cheese
- Salt and pepper, to taste
Instructions
- 1Heat the oil in a large skillet or griddle over medium-high heat and cook the onion and pepper, stirring occasionally, until softened and lightly browned, about 6 to 8 minutes, then set aside.
- 2Add the sliced steak to the same skillet in a single layer and season with salt and pepper, chopping it into smaller pieces with a spatula as it cooks.
- 3Cook the steak for 3 to 4 minutes, stirring frequently, until no longer pink, then return the onions and peppers to the pan and mix everything together.
- 4Push the meat mixture into two piles in the skillet and lay the provolone slices over each pile, letting it melt for a minute.
- 5Split the hoagie rolls open and use a spatula to scoop each cheesy meat pile directly into a roll.
- 6Serve immediately while the cheese is still melted and gooey.
