The Story Behind It

The Tale of Waldorf Salad

Story updated

Waldorf salad was created in the 1890s at New York's Waldorf Astoria Hotel, reportedly by maître d'hôtel Oscar Tschirky, originally made with just apples, celery, and mayonnaise before walnuts were added later. It became an emblem of elegant American hotel dining.

Ingredients

Scale:· 4 servings
  • 3 apples, cored and diced
  • 2 celery stalks, thinly sliced
  • 1 cup red seedless grapes, halved
  • 1/2 cup walnuts, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • Lettuce leaves, for serving (optional)

Instructions

  1. 1Toss the diced apples with lemon juice in a large bowl to keep them from browning.
  2. 2Add the celery, grapes, and walnuts to the bowl.
  3. 3In a small bowl, whisk together the mayonnaise and honey until smooth.
  4. 4Pour the dressing over the apple mixture and stir gently to coat everything evenly.
  5. 5Chill briefly, then spoon onto lettuce leaves to serve if desired.
