Spinach Salad with Warm Bacon Dressing

Ingredients

  • 6 cups baby spinach
  • 6 slices bacon, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 hard-boiled eggs, sliced
  • 1/4 cup sliced mushrooms
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. 1Place the baby spinach in a large heatproof bowl and set aside.
  2. 2Cook the chopped bacon in a skillet over medium heat until crisp, then remove with a slotted spoon, leaving the fat in the pan.
  3. 3Whisk the apple cider vinegar, sugar, and Dijon mustard into the hot bacon fat, stirring until slightly thickened.
  4. 4Pour the warm dressing immediately over the spinach and toss quickly so the leaves wilt slightly.
  5. 5Top with the crispy bacon, red onion, mushrooms, and sliced eggs, then season with salt and pepper and serve right away.
