Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 6 cups chopped romaine lettuce
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 avocado, diced

Instructions

  1. 1Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks.
  2. 2Drain any excess fat, then stir in the taco seasoning with the amount of water called for on the packet and simmer until thickened.
  3. 3Let the meat cool slightly while you spread the lettuce over a large platter or divide it among bowls.
  4. 4Top the lettuce with the seasoned beef, cheddar cheese, tomatoes, black beans, corn, and avocado.
  5. 5Scatter the crushed tortilla chips over the top for crunch.
  6. 6Finish with dollops of sour cream and salsa, then serve immediately.
