The Tale of Kale Salad

Story updated

Kale had long been a minor vegetable in Western cooking until a marketing and health-food push in the early 2010s turned it into one of the most talked-about greens in America, spurring countless raw kale salad recipes.

Ingredients

Scale:· 4 servings
  • 1 large bunch kale, stems removed and leaves thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup toasted walnuts or pine nuts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. 1Place the sliced kale in a large bowl with the olive oil, lemon juice, and a pinch of salt.
  2. 2Massage the kale firmly with your hands for about 2 minutes until the leaves soften and darken slightly.
  3. 3Whisk the honey into any remaining dressing at the bottom of the bowl, then toss it through the kale again.
  4. 4Add the dried cranberries, Parmesan, and walnuts, and toss to combine.
  5. 5Season with black pepper and let the salad sit for a few minutes before serving so the flavors settle.
