The Story Behind It

The Tale of Classic Caesar Salad

Story updated

Caesar salad was created in 1924 by Caesar Cardini, an Italian immigrant restaurateur working in Tijuana, Mexico, reportedly assembled from whatever ingredients were on hand during a busy Fourth of July weekend. It became an American restaurant classic and remains one of the most ordered salads worldwide.

Ingredients

Scale:· 4 servings
  • 1 large head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 cup croutons
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 2 anchovy fillets, minced (optional)
  • Salt and black pepper to taste

Instructions

  1. 1In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic, Worcestershire sauce, and anchovy fillets until smooth.
  2. 2Season the dressing with salt and black pepper, tasting and adjusting the lemon juice for brightness.
  3. 3Place the chopped romaine in a large salad bowl and pour the dressing over the top.
  4. 4Toss well until every leaf is lightly coated, then add most of the Parmesan and toss again.
  5. 5Top with croutons and the remaining Parmesan, and serve right away so the croutons stay crisp.
