The Story Behind It

The Tale of Arugula Salad with Simple Vinaigrette

Story updated

Arugula, known as rucola in Italy, has been used since Roman times, when it was prized both as a food and, according to ancient writers, as an aphrodisiac. Its peppery bite pairs naturally with a simple olive oil vinaigrette in classic Italian tradition.

Ingredients

Scale:· 4 servings
  • 5 cups baby arugula
  • 1/4 cup shaved Parmesan cheese
  • 2 tablespoons pine nuts, toasted
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. 1Place the arugula in a large salad bowl.
  2. 2In a small jar, combine the olive oil, balsamic vinegar, and Dijon mustard, then shake or whisk until emulsified.
  3. 3Season the dressing with salt and pepper to taste.
  4. 4Drizzle the dressing over the arugula just before serving and toss gently, since arugula wilts quickly.
  5. 5Top with shaved Parmesan and toasted pine nuts, then serve right away.
