Pork Tacos with Salsa Verde

Ingredients

  • 1 lb ground pork
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn or flour tortillas
  • 1 cup salsa verde
  • 1/2 cup shredded cabbage
  • 1/4 cup crumbled queso fresco
  • 2 tbsp chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. 1Heat a large skillet over medium-high heat and add the ground pork, breaking it apart with a spatula.
  2. 2Cook for 6 to 8 minutes, stirring occasionally, until the pork is fully browned and no longer pink.
  3. 3Stir in the cumin, chili powder, garlic powder, salt, and pepper, cooking for another minute until fragrant.
  4. 4Pour in half of the salsa verde and simmer for 2 to 3 minutes so the pork soaks up the flavor.
  5. 5Warm the tortillas in a dry skillet or over a gas flame until lightly charred.
  6. 6Fill each tortilla with the pork, top with cabbage, queso fresco, cilantro, and a spoonful of the remaining salsa verde, then serve with lime wedges.
