Slow Cooker Pork Chile Verde

Ingredients

  • 3 lb pork shoulder, cut into large chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups salsa verde
  • 1 can (4 oz) diced green chiles
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 cup chicken broth
  • Chopped cilantro, for serving

Instructions

  1. 1Season the pork chunks with salt and pepper, then heat the oil in a skillet over medium-high heat and brown the pork on all sides, about 5 to 6 minutes.
  2. 2Transfer the browned pork to the slow cooker along with the onion, garlic, salsa verde, green chiles, cumin, oregano, and chicken broth.
  3. 3Cover and cook on low for 6 hours, or until the pork is fork-tender and shreds easily.
  4. 4Remove the pork, shred it with two forks, and discard any large pieces of fat.
  5. 5Return the shredded pork to the slow cooker and stir it into the sauce, adjusting seasoning with salt and pepper as needed.
  6. 6Serve warm, topped with chopped cilantro, alongside rice, tortillas, or beans.
