Roasted Pork Tenderloin with Herbs

Ingredients

  • 1.5 lb pork tenderloin
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Dijon mustard

Instructions

  1. 1Preheat the oven to 425°F and line a baking sheet with foil.
  2. 2Trim any excess silver skin from the tenderloin and pat it dry.
  3. 3Mix the olive oil, rosemary, thyme, garlic, salt, pepper, and Dijon mustard in a small bowl to make a paste.
  4. 4Rub the herb paste evenly over the entire tenderloin.
  5. 5Sear the tenderloin in an oven-safe skillet over medium-high heat for 2 minutes per side until browned.
  6. 6Transfer the skillet to the oven and roast for 15 to 20 minutes, until the thickest part reads 145°F on a meat thermometer.
  7. 7Let the tenderloin rest for 5 to 10 minutes before slicing into medallions.
