Pork Meatballs in Tomato Sauce

Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 jar (24 oz) marinara sauce

Instructions

  1. 1In a large bowl, combine the ground pork, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper, mixing gently until just combined.
  2. 2Roll the mixture into 16 to 18 meatballs, about the size of a golf ball.
  3. 3Heat the olive oil in a large skillet over medium heat and brown the meatballs on all sides, about 6 to 8 minutes total, working in batches if needed.
  4. 4Pour the marinara sauce over the meatballs, cover, and simmer for 15 to 18 minutes, turning occasionally, until the meatballs reach 160°F internally and the sauce has thickened slightly.
  5. 5Let the meatballs rest in the sauce for a couple of minutes before serving over pasta or with crusty bread.
