Ingredients

  • 1.5 lb pork tenderloin
  • 8 slices bacon
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp maple syrup

Instructions

  1. 1Preheat the oven to 400°F and line a baking sheet with foil.
  2. 2Mix the brown sugar, smoked paprika, garlic powder, pepper, and salt, then rub the seasoning over the tenderloin.
  3. 3Lay the bacon slices slightly overlapping on a cutting board and place the tenderloin on top.
  4. 4Wrap the bacon around the pork, tucking the ends underneath, and place seam-side down on the baking sheet.
  5. 5Brush the top with maple syrup and roast for 25 to 30 minutes, until the bacon is crisp and the pork reaches 145°F.
  6. 6Let the tenderloin rest for 5 minutes before slicing into rounds so each piece shows a ring of bacon.
