The Story Behind It

The Tale of Bacon-Wrapped Dates

Story updated

Bacon-wrapped dates trace to Spanish tapas culture, where dátiles con beicon (dates with bacon) pairs sweet, chewy fruit with salty, crisp pork, sometimes with a stuffed almond or cheese center. The tapa spread internationally as Spanish-style small plates gained popularity.

Ingredients

Scale:· 6 servings
  • 20 pitted dates
  • 20 whole almonds
  • 10 slices bacon, halved crosswise
  • 2 tbsp brown sugar
  • 1/4 tsp cayenne pepper, optional
  • Toothpicks, for securing

Instructions

  1. 1Preheat the oven to 400°F and line a baking sheet with foil.
  2. 2Stuff each pitted date with one whole almond.
  3. 3Wrap each stuffed date with a half-slice of bacon and secure it with a toothpick.
  4. 4Arrange the wrapped dates on the baking sheet and sprinkle with brown sugar and cayenne if using.
  5. 5Bake for 15 to 20 minutes, turning once, until the bacon is crisp and browned.
  6. 6Let the dates cool for a few minutes before serving, since the filling stays very hot.
