Spicy Peanut Sesame Noodles

Ingredients
- 10 oz spaghetti or udon noodles
- 1/3 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon sriracha or chili garlic sauce
- 2 cloves garlic, minced
- 1 teaspoon minced fresh ginger
- 2 to 3 tablespoons hot water, as needed
- 1 carrot, julienned
- 1/2 cucumber, julienned
- 2 green onions, sliced
- 2 tablespoons chopped peanuts, for garnish
Instructions
- 1Cook the noodles in boiling water according to package directions until tender, then drain and rinse under cold water to cool and prevent sticking.
- 2In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, garlic, and ginger until smooth, adding hot water a tablespoon at a time to thin to a pourable consistency.
- 3Toss the cooled noodles with the peanut sauce until evenly coated.
- 4Add the carrot and cucumber and toss again to combine.
- 5Divide among bowls and top with green onions and chopped peanuts before serving, either chilled or at room temperature.
